Green Chicken Yogurt Curry

Per Serve: 3

Ingredients:

  • 1 red onion, sliced
  • 500g skinless chicken fillets, sliced
  • 200g green beans, trimmed
  • 1 carrot, peeled and thinly sliced
  • 2-3 tablespoons Thai green curry paste
  • 200g tub Australian Natural Yogurt
  • 2 teaspoons brown sugar
  • 1 tablespoon soy sauce
  • jasmine rice, for serving
  • extra yogurt, for serving

 Method:

  1. Heat oil in a pan and sauté onion, chicken and curry paste for 2-3 minutes or until golden.
  2. Add vegetables and 1 tablespoon water, cook, covered for 5 minutes until vegetables are tender. Stir in yogurt and gently warm through. Season with brown sugar and soy.
  3. Serve with steamed jasmine rice and an extra dollop of natural yogurt.

All recipes tested using standard 250 ml cup and 20 ml tablespoon.
