Green Chicken Yogurt Curry

Ingredients:
- 1 red onion, sliced
- 500g skinless chicken fillets,
sliced
- 200g green beans, trimmed
- 1 carrot, peeled and thinly sliced
- 2-3 tablespoons Thai green
curry paste
- 200g tub Australian Natural
Yogurt
- 2 teaspoons brown sugar
- 1 tablespoon soy sauce
- jasmine rice, for serving
- extra yogurt, for serving
Method:
- Heat oil in a pan and sauté
onion, chicken and curry paste for 2-3 minutes or until golden.
- Add vegetables and 1 tablespoon
water, cook, covered for 5 minutes until vegetables are tender. Stir in
yogurt and gently warm through. Season with brown sugar and soy.
- Serve with steamed jasmine rice
and an extra dollop of natural yogurt.
