Salmon Stacks with Wasabi Yogurt

Per Serve: 4 

Ingredients:

  • 1 cup Australian low fat natural yogurt
  • 2 teaspoons wasabi paste
  • 2 x 80g wholemeal pita breads
  • 150g smoked salmon, sliced
  • 1/4 butter lettuce, washed and finely shredded
  • 1 continental cucumber, peeled, halved, deseeded and thinly sliced
  • 1/4 bunch chives, chopped into 3cm long pieces
  • salt and pepper, to taste

 Method:

  1. Combine yogurt and wasabi. Cut pita bread into quarters and oven bake until crisp and golden. Combine shredded lettuce, spring onions and cucumber.
  2. Arrange half the pita crisps between 4 plates. Top evenly with half the salad, smoked salmon and a tablespoon of wasabi yogurt, season to taste. Repeat layers and finish with a dollop of wasabi yogurt and snipped chives.

 All recipes tested using standard 250 ml cup and 20 ml tablespoon.
